The Ultimate Fluffy American Pancakes

Makes 6, Total prep and cooking time 15 minutes

I am definitely more of a fluffy American pancake kinda girl - I’d take them over crepes any day. This is my mum’s recipe & I’ve honestly never discovered one I like more. My favourite toppings are fresh berries, vanilla yogurt and a splash of maple syrup - but if you’re feeling super indulgent why not try raspberry and white chocolate? Or nutella and strawberry? Or biscoff and banana? I could go on and on….

Ingredients:
1 cup plain flour
1/4 cup caster sugar
2 eggs, beaten
12g butter
1/2 pint milk
2 level tsp cream of tartar
1 level tsp bicarbonate of soda
1/2 level tsp salt

Method:
1. Mix dry ingredients together: flour, sugar, cream of tartar, bicarbonate of soda and salt
2. Whisk the eggs and melt the butter separately. Add milk to the eggs then gradually add the melted butter (you don’t want to do this too quickly or the hot butter can scramble the eggs!)
3. Put your pan on medium heat and melt a knob of butter. Scoop 1/6th of the mixture into the pan and leave to cook until bubbling - then flip over and cook the other side. Repeat until you have made 6 pancakes.
4. Serve with a drizzle of maple syrup, dollop of yogurt and some chopped fruit.
