Easy Beef Bibimbap

4 servings, 35 minutes prep, 15 minutes cooking time

This is a classic Korean dish - it is basically mixed rice with meat and assorted veg, usually served in a hot ceramic bowl - but it’s always a firm fan favourite. It is delicious and warming & perfect for when you fancy a bit of non-British comfort food.

Ingredients

Meat & Meat Sauce:
100g beef mince
1 tbsp soy sauce
1 tbsp sesame oil
1 tsp brown sugar
Clove of garlic

Veg + Other Toppings:
250g mildly seasoned (salted) spinach
350g beansprouts
100g shiitake mushrooms
1 small carrot
250g steamed rice
4 eggs
Shredded seaweed (optional)
Kimchee (optional)

Bibimbap sauce:
2 tbsp gochujang
1 tbsp sesame oil
1 tbsp sugar
1 tbsp water
1 tbsp roasted sesame seeds
1 tsp vinegar
Clove of garlic

Method:

  1. Marinate the beef mince in the meat sauce ingredients: soy sauce, sesame oil, brown sugar and garlic. Leave for 30 minutes while preparing the bibimbap sauce and slicing your veggies.

  2. Put your rice on to steam. This should take around 20-30 minutes.

  3. Cook the marinated meat on high heat for 3-5 minutes.

  4. Fry spinach and beansprouts together for 30 secs. Add your julienned carrots (thin slices) and cook for 2-3 minutes.

  5. Add the thinly sliced mushrooms and cook on high for another 2-3 minutes.

  6. Prepare your eggs in a separate pan: simply fry them with a little splash of oil and a pinch of sea salt in the yolk.

  7. In a bowl, add rice first then top with the meat, veg, sauce & pop a fried egg on top. Garnish with a few sesame seeds and spring onions. (Optional: Add your kimchee or seaweed now too.)

  8. To eat, mix all ingredients together and enjoy!
