Oven-Roasted Miso Sesame Salmon

Serves 2, Total time 45 minutes

This is a delicious dish to whip up mid-week. Serve with rice, quinoa, salad or veggies for a healthy and nutritious meal.

Ingredients:

2 boneless, skinless salmon fillets
2 tsp miso paste
1 tsp apple cider vinegar
Clove of garlic
1 lemon
2 tsp soy sauce
1 tsp honey
Sesame seeds
1 spring onion

Method:

  1. Combine miso paste, apple cider vinegar, garlic, the juice of half a lemon, soy sauce, honey and sesame seeds together in a bowl and pour over the salmon. (For best results, brush the sauce on using a pastry brush). Marinate for 30 minutes in foil.

  2. Cut the remaining half of the lemon into thin circular slices and place on top of the salmon. Close the foil and bake in the oven for 15 minutes on 180 degrees celsius.

  3. Garnish with chopped spring onion and a few more sesame seeds. Serve with rice, quinoa, salad or veggies.
