15-Minute Goodness Bowl

Serves 2, Total prep and cooking time 15 minutes

The perfect quick whip-up dish - for when you need a healthy meal in a hurry.

Ingredients:
3 handfuls of kale
12 baby tomatoes (I prefer on-the-vine)
4 falafels
2 tbsp olive oil
2 handfuls of baby spinach
4 stalks of tenderstem broccoli
1 red pepper
4 chestnut mushrooms
2 cloves of garlic
Pinch of sea salt (I prefer maldon)
Cracked black pepper
1 tsp red chilli flakes
Half an avocado
Half a lime
2 tbsp hummus (I prefer sabra red pepper and garlic)

Method:
1. Heat the oven to 180 degrees celsius.
2. Place the falafels, kale and tomatoes on an oven tray. Massage the kale with half a tbsp olive oil and a pinch of sea salt. Drizzle the remaining half tbsp olive oil over the tomatoes along with a crushed garlic clove. Bake for 8 minutes.
3. Sauté the pepper, mushrooms & remaining garlic clove in a pan on medium heat. After 5 minutes, add some cracked black pepper & half a cup of water. Stir occasionally. Simmer for a further 5 minutes.
4. Mash the avocado. Squeeze the lime over the avo - along with some salt, pepper and chilli flakes.
5. Put together your bowl: I started by layering spinach, then the kale then put everything else on top - the garlicky tomatoes, sautéed veggies, guac and a good dollop of hummus (about 1 tbsp). I also added a ryvita seeded cracker for dunking purposes!
