Healthy Vegan Choc Chip Cookies

Makes 8, Total prep and cooking time 25 minutes

I was hesitant to try ‘healthy’ cookies but these are honestly my new favourites - maybe even more so than their full-fat equivalents. They are crispy on the outside but soft in the centre, and are packed full of flavour. Off to make a batch now actually….

Ingredients:
2/3 cup almond flour
1 cup spelt flour
2 tbsp coconut yogurt
2 tbsp almond butter
8 medjool dates
2 tbsp maple syrup
1 tbsp vanilla essence
3 tbsp coconut oil
1.5 tsp baking powder
50g dark choc

Method:
1. Mix the dry ingredients together in a bowl: almond flour, spelt flour and baking powder.
2. Soak the dates in a bowl of hot water to soften.
3. Mix the other wet ingredients together: coconut yogurt, almond butter, maple syrup, vanilla essence & coconut oil.
4. Blend the wet ingredients and the dates together.
5. Add the wet ingredients to the dry ingredients. Roughly chop the dark chocolate and mix through.
6. Roll into 8 individual balls and place on a lined baking tray. Gently press each ball with a fork to flatten slightly.
7. Bake for 12-13 minutes at 180 degrees celsius.
