Anzac Biscuits

Makes 20, Prep time 15 mins, Cook time 10-12 mins

This recipe makes about 20 regular-sized biscuits however if you fancy yours a bit larger, the recipe will probably make 12-14. If you fancy a crispier biscuit, flatten the balls of dough a little before baking.

Ingredients:
1 cup rolled oats
1 cup coconut chips
1 cup wholemeal or spelt flour
1/2 cup demerara (or brown) sugar
1 tbsp golden syrup or maple syrup
1 tsp bicarbonate of soda
1/2 cup melted butter (approx 125g)

Method:
1. Preheat the oven to 150 degrees celsius.
2. Combine the oats, coconut, flour and sugar in a mixing bowl.
3. Mix golden syrup/maple syrup, bicarbonate of soda & 2 tbsp boiling water in a bowl. Stir until the mixture is a little foamy, then stir in the melted butter.
4. Add the wet ingredients into the dry ingredients and mix well with your hands. Add a pinch of salt if you used unsalted butter - omit this if you used salted butter.
5. Place spoonfuls of the mixture on a lightly-floured tray, leaving plenty of room between for the biscuits to spread.
6. Bake for 10 minutes then check - if they are golden brown, they are ready.
7. Allow the biscuits to cool before eating - cool for at least 10 mins.
