Simple Sweet Potato & Red Pepper Soup

Makes 2 portions, Total time 1 hour

A warming and nutritious vegan soup, that is incredibly simple to make. The almost-nutty sweet potato combined with the sweet pepper is the perfect balance, and if served with a good chunk of crusty bread, this is a seriously delicious meal.

Ingredients
1 large sweet potato (or 2 small sweet potatoes)
1 large red pepper (or 2 small red peppers)
2 tbsp olive oil
1L vegetable stock
1 tbsp cumin
1 tbsp paprika
Sea salt flakes
Ground black pepper
Fresh basil

Method
1. Chop the sweet potato and peppers into similar sized chunks & season with the cumin, paprika and some black pepper. Roast for 30-40 minutes in the olive oil.
2. Remove from the oven and blend with the stock, adding it gradually until the mixture reaches a good consistency.
3. Season with salt and pepper, and garnish with fresh basil.
