The Gin & Ginger

Ingredients:
16-20 mint leaves
30 ml ginger syrup (recipe below)
120 ml gin
30 ml fresh lime juice
120 ml ginger beer
6-8 dashes of lime bitters (optional)
2 cups of granulated sugar
4 inches of ginger, peeled and sliced

Method:
1. Make the ginger syrup. In a small sauce pot, combine 2 cups of water with the sugar and ginger. Bring to a boil until the sugar dissolves then remove from the heat. Cover the pot with a lid and let the ginger steep for 15-20 minutes then strain. (This will keep for 2 weeks)
2. In a tall glass, muddle mint leaves with the ginger syrup.
3. Add the gin, lime juice, ginger beer and lime bitters. Stir it all together.
4. Add ice then garnish with a wedge of lime and a few extra mint leaves if you have them.
